     Carrot Beans Poriyal | Carrot Beans Stir Fry with Step by step photos. Poriyal is one common lunch side dish that we prepare daily. It can be with any one of the vegetable. Stir fry is prepare by cooking the vegetables to perfection and then sauted with coconut. It goes well with Steamed Rice and Sambar.Now let’s see how to prepare Carrot Beans Stir fry.

    Carrot Beans Poriyal | Carrot Beans Stir Fry

     

        Step by step Method with pictures: 
        1.    In a Kadai add in oil once it heats up add in Mustard seeds and Cumin seeds ,let it splutter and then add in curry leaves saute and then add in chopped onions ,cook till they turn glossy. Next add in the chopped Carrot and Beans mix well

     2.    Add in the required salt and turmeric powder mix well and then add in the water. Cook till the carrot and beans are done they become completely dry without any water.

     3.    Meanwhile in a blender grind the coconut, dry red chilli and garlic pods together to a coarse mixture. Add this to the cooked beans and carrot saute in a low flame for 5 mins and then switch off the flame.

    Standard 1 cup measures 240 ml

    Ingredients

    • Onion – 1
    • Carrot – 2
    • Beans – 15
    • Turmeric powder – ½ tsp
    • Salt as needed
    • Water – ½ cup
    • Oil – 1 tbsp
    • Mustard seeds – ½ tsp
    • Cumin Seeds – ½ tsp
    • Curry Leaves a spring

    To Grind:

    • Coconut – ¼ cup
    • Dry Red Chili – 4
    • Garlic pods - 5

    Instructions

    Notes

    •  Goes well with Rice and Sambar.
    •  Replace Dry red chilli with green chilli if you prefer.
