    Cauliflower Pakoda Recipe

Recipe Cuisine: Tamil Nadu  |  Recipe Category : Appetizer
    Prep Time:  15 mins | Cook Time : 8 mins / batch | Serves: 4 |Author :Sharmila Kingsly
    Ingredients:

    Cauliflower – 1 medium sized

    Besan flour /Gram Flour – ½ cup
    Maida / Rice flour – 3 tbsp
Red Chilli powder – 1 tsp
    Turmeric powder – ½ tsp
    Salt as needed
    Cooking Soda – ½ tsp
    Oil for deep frying
    Water as needed
    Curry Leaves – 2 spring
         Method:
        1.    In a small sauce pan add water to this add turmeric powder and Salt .bring it to a boil. Meanwhile chop the cauliflower and make it like small florets.
         2.    Once the water comes to a boil switch off the stove and add in the cauliflower florets and let it rest for 5 mins and then strain the cauliflower from water and set aside.
        3.    In a bowl add in Gram Flour, Rice flour or Maida, Chilli powder, Turmeric powder, Salt and Cooking soda. Mix well and add water little by little to form a paste without any lumps.
         4.    Now add the cauliflower florets to the paste and mix well. Meanwhile heat oil in a pan for deep frying.
        5.    Once it becomes hot add in the batter coated cauliflower florets and fry in a medium flame till golden brown. Add in the curry leaves also in the oil for a nice flavour. Once its golden and crispy drain in a paper towel. Serve hot.
      Notes:
         ·       Cook in a low medium flame so that the batter and cauliflower are cooked evenly.
         ·       The batter consistency should slightly thicker than the idli batter, also make sure the batter is coated evenly over the cauliflower for deep-frying.
         ·       While deep-frying don’t immediately flip the sides it might make the batter and cauliflower get separated. So give some cooking time and then use a spoon to flip and cook.
          ·       Serve hot with tea and sauce.

My boys would eat plates and plates of the gobi pakora. I love the idea of frying the curry leaves along with the pakoras. That would give it so much flavor. I am tempted to make some soon.

Another nostalgic post. On our visit to MArina beach after we got married,we saw this lady with a huge pot of oil frying an array of bajjis. We got a platter of mixed vegetables and it was so good! Your pakoras look so crisp and yum!
