    Empire Biscuits

    Empire biscuits are traditionally from Scotland and it is also popular among many countries in Europe. It is prepared by sandwiching shortbread cookies with Jam or Icing and the topped with Royal icing and a glazed Cherry.

     
    I decided to bake Empire biscuits literally last night only and did it, then prepared the icing and clicked today morning. Indeed this month is really tight with the new place, Work and due to so many other factors, I had to keep on traveling between Chennai and Bangalore. I didn't get enough time for this month Marathon, I had to wake up early and finish my baking, Yes I won’t give up J So here I am with the recipe, Now let’s get started!!

    Step by step Method with pictures:
     
    1. In a mixing bowl cream together the sugar and butter till they are well combined.

    2. Next add in the flour and mix well. Bring everything together to form a soft dough. Shape it in the form of logs and then cling wrap or in any desired shape. Refrigerate min of 2 hours to 2 days and then slice them in the shape of discs.

    3. Place them in the prepared baking tray. Preheat the oven at 180 Deg C for about 10 mins and then bake for 10- 13 mins .allow it to cool completely and then store.

     

    4. To prepare the royal icing, In a bowl take Icing sugar, Cornflour, Milk and Lemon juice mix everything together to form a thick flowing consistency.

     

    5. Now let’s assemble the cookies take two cookies. Spread a layer of icing and then sandwich another cookie on the top.

     

    6. Now spread the royal icing on the top of the cookies and place cherries on the top. Allow till the icing gets completely dry and then store the cookies.

    Notes:
    Instead of Royal Icing, Any Jam or Fruit preserve can also be used between the cookies.
    The baking time may vary from oven to oven. So check the biscuits at 8 mins as it gets baked very soon.
    You can also, use a cookie cutter to shape the cookie.
    As I ran out of time, I couldn’t wait till the Royal Icing to get dry, I clicked picture before that
