    Hamantash Cookies

    Hamantash is a Jewish cookie that is triangular n shape and has a filling in the center. The cookie is circular one and it is folded to achieve a triangular shape. Traditionally the filling would be poppy seeds, dates, or apricots. Pastry puff can also be used to make the cookies.

    The cookies have an old history in Jewish mythology. It is named after Haman an enemy of the Jews according to the Book of Esther(Ref wiki). So the cookie name literally means Haman Ears.
    Serve this delicious Hamantash with an extra scoop of filling.

    Step by step Method with pictures:
     
    1. In a mixing bowl add in powdered Sugar and soft unsalted butter. Cream together and mix well.

     2. Add in Vanilla essence and Lemon zest mix well.

     

     3. Now add in all-purpose flour, bring the dough together to form a soft dough. Cling wrap and put in the fridge for 30 mins.

     

     4. Dust the working surface with flour and spread using a rolling pin. Using a cookie cutter cut into circles.

     

    5.  Now spoon the filling and fold the cookies. Make sure it is sealed well on all sides. 

     

     6. Preheat the oven at 180C for 10 mins and bake for 12-15 mins are until the cookies become golden. 

     
    Serve this delicious Hamantash with an extra scoop of filling.

    Ingredients

    • Soft unsalted Butter – ½ cup
    • Sugar – ¼ cup
    • All-purpose flour – 1 cup
    • Vanilla essence – 1 tsp
    • Lemon zest – 1 tsp
    • Any Fruit Jam for filling – as needed

    • Add-in Vanilla essence and Lemon zest mix well.
    • Now add in all-purpose flour, bring the dough together to form a soft dough. Cling wrap and put in the fridge for 30 mins.

    Notes

    Traditionally the cookies use a filling with Poppy seeds and nuts.
    But I have used Jam. Use a small quantity and make sure the edges are sealed properly otherwise the filling might fudge out.
