    Mixed vegetable gravy or kurma is a tasty vegetable curry with lots of veggies in it. It goes well with poori, chapati, pulao, or even with idli and dosa

    Mixed Vegetable Gravy | Mixed Vegetable Kurma with step by step pics. I always have a lot of  Vegetables. I love to include vegetables in all forms in my diet. This Mixed vegetable gravy has plenty of veggies in it.

    I am using Beans, Carrot, Potato. We can even add Green peas, Cauliflower or even bell peppers, snow peas, baby corn.

    How to prepare Mixed Vegetable Gravy

     
    1) Heat a kadai and add in oil. Once the oil becomes hot add in Fennel seeds and Green Cardamon and let it splutter.

    2)Now add in onion and the slit Green chilli.

    3) Once the onion turns translucent add in Ginger garlic paste and fry for two mins or till the raw smell leaves and then add in the chopped tomato and cook till it become mushy.

    4) Now add in the chopped vegetables and fry for about 2 mins

    5) Next add in all the spice powders,Salt and the ground coconut paste and add in the required water and mix well.Once it starts to boil close the cooker and pressure cook for 3 whistles.

    Healthy Mixed Vegetable Gravy is now ready to serve. Served hot with any Indian Flatbread.

    Standard 1 cup measures 240 ml

    Ingredients

    • 1 Onion - chopped finely
    • 2 Tomato
    • 3 Green chilli slit open
    • 1 tsp Chilli powder
    • 1 tbsp Coriander powder
    • 1 tsp Garam masala powder
    • 1 tbsp Ginger garlic paste
    • 1 Carrot finely chopped
    • 1 Potato medium sized
    • 5 Beans
    • Salt as needed
    • 1 cup Coconut
    • 1 tsp Fennel seeds/Saunf
    • 2 Green Cardamon
