    Oatmeal Raisin Bars are lovely and protein-rich breakfast bars. It is rich in fibers and minerals and a perfect way to start the day with. A breakfast bar with some nuts or fruits is the best and most healthy way to start a day.

    Ingredients

    Rolled Oats - Rolled oats have a beautiful texture and hence they are perfect for the bars. You may use whole rolled oats and or even oatmeal. Both are perfect for the bars.

    Banana - You may use any ripe sweetened banana. It should measure approximately 1.5 cups after mashing. You can use any variety of bananas as you prefer. Approximately 4 medium-sized bananas mashed measured 1.5 cups.

    Raisins- they are naturally sweet and blend beautifully with oats. I am using both golden and black raisins. Use any as you prefer.

    Almond Butter - They blend everything beautifully and enrich the bars with protein. In place of Almond butter, you may also use any other nut butter. Peanut butter or even Cashew butter works well. You can also use sunflower seeds butter if you do not prefer nut butter.

    FAQ's

    Can I use frozen bananas?
    If using frozen banana, Microwave the banana for one min. The banana becomes soft. You can then peel the skin and use it.
    Can I replace the banana?
    I highly recommend not replacing the banana. However, you can try applesauce in place of the banana. Make sure to adjust the Oats if adding applesauce.
    What can I use instead of Almond Butter?
    You may use Peanut Butter or Cashew Butter. All the nut butter works well for the recipe.

    How to make Oatmeal Raisin Bars

    In a mixing bowl add the banana and mash well without any lumps. Always use overripe bananas for the best results

    Next, add the almond butter. Whisk well and combine

    And then add in the rolled Oats. Fold gently until mixed.

    Next, add the raisins.

    Fold everything together. Prepare a 6 * 6 inch square baking tray and line them with parchment paper. Transfer the prepared batter to the baking tray.

    Top them with more raisins.

    Preheat the oven to 180 deg C and then bake at 180 Deg C for about 20 - 22 mins or till the toothpick when inserted comes out clean. Let it cool completely and then slice and serve.

    Vegan Oatmeal Raisin Bar is now ready to serve.

    Serving Suggestions

    They are perfect to go for breakfast along with smoothies or fruits. Also makes a good protein bar post workout.

    Storing Options

    Bars stay good at room temperature for one day and then put in the fridge after that. However, I recommend storing them in the fridge once they are completely cool down.
