Rava Payasam Recipe | Sooji Kheer with Step by step photos. Payasam / Kheer is a great after-meal dessert served in Indian Thali. Rava Payasam is a simple and yummy kheer as it uses just simple ingredients readily available in most households.
Rava Payasam gets thicker as it cools down so adjust the consistency and switch off the flame accordingly. If it becomes really thick you can add a ½ cup of hot milk and adjust the consistency. Now let’s see how to prepare Sooji Kheer.
How to make Rava payasam
2. In a same pan add in the Rava and roast it till it becomes grainy in a very low flame and set aside.
3. In a sauce pan add in the Milk and bring it to boil. Next add in the Rava and mix well. It may appear watery at till stage but never mind the rava increases in volume as it gets cooked.
4. Next add in the sugar and rose water (if using) and mix well. Once the rava is cooked and the kheer becomes thick .Switch off the fame and add in the ghee roasted cashew nuts and raisins. Add in ½ cup hot milk if the kheer appears very thick.

Rava Payasam | Sooji Kheer
Standard 1 cup measures 240 ml
Ingredients
- Rava / Sooji – 4 tbsp
- Milk – 2 cups
- Sugar – ½ cup + ½ cup if needed
- Ghee – 1 tbsp
- Cashew nuts – 7
- Raisins – 7
- Rose essence – ¼ tsp Optional
Instructions
- In a pan add in ghee once it heats up add the cashew nuts and raisins, roast till the cashew nuts turn brown and the raisins plump up. Remove from the pan and set aside.
- In a same pan add in the Rava and roast it till it becomes grainy in a very low flame and set aside.
- In a sauce pan add in the Milk and bring it to boil. Next add in the Rava and mix well. It may appear watery at till stage but never mind the rava increases in volume as it gets cooked.
- Next add in the sugar and rose water (if using) and mix well. Once the rava is cooked and the kheer becomes thick .Switch off the fame and add in the ghee roasted cashew nuts and raisins. Add in ½ cup hot milk if the kheer appears very thick.
Notes
· The kheer gets thicker with time so switch off when its slightly watery.
· Sugar can be replaced with Condensed Milk.
