Red Amaranthus Stir Fry Recipe | Sivappu thandu Keerai Poriyal | Keerai Thoran with step by step pictures. It is a healthy lunch side dish recipe made with red Amaranthus. It goes well with rice and sambar or even fish curry. My personal favorite is fish curry.
2. Next add in the salt and turmeric powder. Cook for a min and then add in the Cleaned and chopped Keerai.
3. Cook in a medium flame. Meanwhile, in a blender add in the grated coconut and dry red chili. Grind it to a coarse paste.
4. Once the keerai is fully cooked add in the ground coconut paste cook for another 2 mins in a low flame and switch off the flame.

Red Amaranthus Stir Fry | Sivappu thandu Keerai Poriyal
Standard 1 cup measures 240 ml
Ingredients
- Red Amaranthus – 1 bunch
- Onion – 1
- Oil – 1 tbsp
- Cumin Seeds – 1 tsp
- Urad Dal – 1 tsp
- Turmeric powder – ¼ tsp
- Salt as needed
To Grind:
- Grated Coconut – ¼ cup
- Dry Red Chilli - 3
Instructions
- Heat a pan with oil once hot add in the Cumin seeds and Urad Dal. Let them splutter and then add in the Onions. Sauté till glossy.
- Next add in the salt and turmeric powder. Cook for a min and then add in the Cleaned and chopped Keerai.
- Cook in a medium flame. Meanwhile in a blender add in the grated coconut and dry red chilli. Grind it to a coarse paste.
- Once the keerai is fully cooked add in the ground coconut paste cook for another 2 mins in a low flame and switch off the flame.
Notes
- Goes well with Rice and spicy gravy.
- Make sure you clean the keerai well before cooking as there might be small sand particles.
- Never add water while cooking the keerai.
- Always cook on a medium low flame.
