    Red Velvet cup cake - Celebration Recipe

    Red velvet cake is a cake with either a dark red, bright red or red-brown color. It is traditionally prepared as a layer cake topped with cream cheese or cooked roux icing.
    Common ingredients include buttermilk, butter, cocoa, and flour for the cake, beetroot or red food coloring for the color(Wiki).

    One more common ingredient used in the red velvet cake is the Vinegar .The acidic reaction between the vinegar and baking soda gives a nice texture to this red velvet cakes. As Vinegar and Baking soda is used in red velvet Baking powder is not used. I always had plans in my mind to bake a red velvet cupcake but was waiting for the perfect occasion. Finally I found today is the perfect day to give a try.


    Red Velvet Cup Cake Recipe

    Unsalted butter – 4 tbsp at room temperature
    Granulated sugar - 1 cup
    Egg  -1
    Cocoa powder – 21/2 tbsp
    red food coloring – 3 tbsp
    vanilla essense – ½ tsp
    Buttermilk- ½ cup
    All Purpose flour -1 cup
    Salt – ½ tsp
    Baking soda - ½ tsp
    white vinegar – 11/2 tsp
    White chocolate - 50 grams or as needed
    Sprinkles of your choice
     Method:
         1)     Preheat the oven at 180 deg C for about 10 mins and Line a Muffin mould with cupcake Liners. Take the Powdered sugar and the room temperature butter and beat well until well combined.
        2)     Crack open the eggs beat well until the egg doubles in volume, It might take about 1 min. In a small bowl add in the cocoa powder, Red food colour, Vanilla essence and make a fine paste and add into the egg sugar and butter mixture. Beat well until all the ingredients are well combined. Now add in half of the buttermilk and beat well and once the mixture is well combined add the other half and repeat the process.
       3)     Now add in Salt, Baking soda and Vinegar and fold the mixture gently. Now take the flour and add in small batches to the batter and fold gently until everything is mixed well.
    Now pour the prepared batter in the lined cupcake mould and bake in 180 deg C for about 20-22 mins or until the tooth picked inserted comes out clean.

    4) Once the Red velvet cup cakes are cooled completely. Chop the white chocolate into small pieces and microwave it from about 1 min.Now Pour the melted white chocolate on top of the red velvet cupcakes and used your favorite sprinkles as topping. Red Velvet cake is ready to be served.

     
    Tips:
    1) Baking time may vary from oven to oven so always keep an eye after 20 mins.
    2) Red food color can also be replaced by beetroot puree ,In that case the cup cases would be dark pinkish.
    3)You can also replace Vinegar with Lemon Juice.
