Sabudana Khichdi is a no onion no garlic and a grain-free food which is usually prepared during the Fasting days.
Sabudana Khichdi is a vegan and gluten-free fasting dish made with Tapioca pearls, Potato, and Roasted peanuts.
In India, Navaratri and Maha Shivaratri are celebrated over a few days and on these days usually fasting is observed.
During the fasting days, no onion no garlic and a grain-free diet is followed and Sabudana Khichdi fits perfectly in the bucket.
Sabudana is rich in carbs and it keeps us full for a long time which is why it is one of the best fasting food.
The first time I tried sabudana Khichdi was from my College in Bangalore, before that I didn't have any idea about the recipe. I kind of liked the taste.
I took the recipe from her and since then I keep trying.
Initially, I couldn’t get the perfect khichdi, but over time and with practice it gets it perfect just the way how it is meant to be.
Before we got introduced to Sabudana Khichdi, Sago Kheer was the common dish we prepare using Sago but now Sago vada and this khichdi became very usual dishes.
Apart from this we also prepare Puttu with tapioca flour, which is another interesting dish.

Soaking Sago for the Khichdi:
Sabudana or Sago needs to be soaked overnight to get soft nonsticky Khichdi. I don’t follow any measurements while soaking the sabudana.
If you take one cup of sabudana in a bowl, add water such that the sabudana is completely immersed in water. The next day the water will be absorbed completely, and the sago will turn soft.
If you press the sago in between your fingers it should soft and break easily.
How to Prepare Non-Sticky Sabudana Khichdi:
Soaked sabudana is cooked with Boiled potatoes, roasted peanuts, and a few basic tempering.
Tips for Non Sticky Sabudana Khichdi:
Wash the sabudana 3 or 4 times with water before soaking to remove the excess starch. This is a very important step to get a non-sticky sabudana Khichdi.
Do not add more water while soaking the sago, add the water just above the sago level it is sufficient .
Let it soak for at least 8 hours or overnight is the best way.
If you press the sago in between your fingers it should soft and break easily.
Sago gets cooked in just 2 or 3 minutes, So don’t let it sit in the pan for more time.
After adding Milk, close and cook for few secs and then open the pan. Stir gently so the sago will not stick to each other.
If you have a doubt, no need to close and cook, Just keep sautéing keeping the pan open.

Sabudana / Sago :
To get a perfect nonsticky sabudana, soaking the sago is very important. Choose good variety sago and soak it overnight with water.
Make sure you add water such that it's at the same level as of the sabudana. In the morning if you see the sago would have completely absorbed the water and it would be soft.
If you press with your fingers the sago would mash, that is the correct consistency.
Boiled potatoes.
Potato gives a nice volume to the khichdi, Also it is perfect to keep us full for a long time.
Roasted Peanuts.
Peanuts elevate the taste of the khichdi, so go ahead and add as you like.
Sabudana Khichdi recipe ,Pictorial:
1.In a bowl add in 1 cup of sabudana. Wash it for 3 or 4 times till you get clear water to remove all the starch. Next add in water such that the sabudana is full soaked and allow it to soak overnight.
2.In the morning if you see, the water will be absorbed completely and the sago will be soft. If you press it between your fingers it will mash easily.
3.Heat a pan with oil, Once its hot add in the Cumin Seeds, Let it splutter
4.Add 2 green chili, Sauté for few secs and add curry leaves if adding. Next, add in the boiled potatoes. You can mash or chop into small pieces and add to the khichdi. Sauté for a min.
5.Now add in the soaked sabudana, it will be soft by now. Add and mix well.
6.Add in the roasted peanuts, required Salt and mix well. Now add in a tbsp of milk .
7.Cover and cook for few secs and then open and stir everything immediately. Sabudana gets cooked in 2 mins. Don’t cover for more time as the sabudana might stick to each other.
8.Next add in Sugar, Chopped Coriander leaves mix well saute for few secs and then switch off the flame.
9.Finally garnish with lemon juice
Serve hot with Chai

Standard 1 cup measures 240 ml
Equipment
- Kadai or Saute pan
Ingredients
- 1 cup Sabudana / Tapioca Pearls
- 1 tbsp Oil
- ½ tsp Cumin Seeds
- 2 Green Chili
- 1 Potato Medium Sized
- ½ cup Peanuts roasted and crushed
- Salt as needed
- 3 tbsp Coriander leaves
- ¼ tsp Sugar
- ½ tsp Lemon Juice
Instructions
- In a bowl add in 1 cup of sabudana. Wash it for 3 or 4 times till you get clear water to remove all the starch. Next, add in water such that the sabudana is fully soaked and allow it to soak overnight.
- In the morning if you see, the water will be absorbed complete and the sago will be soft. If you press it between your fingers it will mash easily.
