    Schezwan Egg Fried Rice

    Schezwan Egg Fried Rice is a popular Indo chinese dish . It is mildly spicy due to the schezwan sauce added but tastes too good.

    Egg fried Rice is one of my favourite Indo Chinese dish. I usually make it when I have some leftover cooked rice and if I had to prepare food only for me. If I wanted to eat something spicy I prepare the spicy version of the egg Fried Rice yes, it is Schezwan Egg Fried Rice. I usually have red Chilli paste (check notes to see how to prepare red Chilli paste.) and Eggs handy. So in just 10-15 mins my meal will be ready.
    Schezwan Egg Fried Rice pairs well with Chicken Manchurian or just Tomato Sauce.

    Step by step Method with pictures:
     
    1. In a kadai/Wok add in oil, once it heats up add in Chopped Garlic, let it cook till the raw smell leaves, next add in the Onion and Capsicum sauté until golden.

    2. Next add in Red Chilli paste/Schezwan Sauce, Soya sauce, Vinegar mix everything well and then add in Salt and sugar ,Cook until the sauce becomes thick.

     

    3. Now move the ingredients to the corner of the wok, Meanwhile break open the eggs in a bowl and beat well, Add the beaten egg to the wok, Scramble and cook till it’s done.Add in the Spring onion whites now.

     

    4. Finally add in the cooked rice(Click here how to cook Basmati Rice perfectly for Fried Rice) and Mix well, sprinkle the required pepper powder and the chopped spring onions, give a gentle mix without breaking the rice and switch off the flame. Serve hot 

     
    Egg Fried Rice makes an easy and delicious instant food. It can also be made with left over rice.

    Equipment

    • Wok

    Ingredients

    • ½ cup Cooked Basmati Rice
    • Egg - 2
    • Onion – 1
    • Capsicum – ½ cup
    • Garlic pods -4-5
    • Red Chilli paste/Schezwan sauce – 1 tsp
    • Soya sauce – 1 tsp
    • Vinegar – ¾ tsp
    • Salt as needed
    • Sugar – ½ tsp
    • Pepper as needed
    • Spring onion – 4 tbsp
    • Olive oil – 2 tbsp

    Instructions

    Notes

    • Tastes best when served hot.
    • It pairs well with any Manchurian dish or Tomato ketchup.
    • To prepare the Red Chilli paste you can de-seed the dry red chilli and boil in hot water for 5 mins, once it cools down grind to a fine paste by adding a tsp of Olive oil.
    • Instead of Red Chilli paste, Store bought Schezwan sauce can also be used.
    • However it is advisable to use homemade red chilli paste.
