Vegetable Pulao is an easy one-pot meal made in a Pressure Cooker by cooking basmati Rice with assorted vegetables. Goes well with Raita
Pulao is always a savior when we need to prepare a delicious meal but left out with no time. They taste awesome with just any Raita no need for any separate Curry or Subzi. Sharing today an easy and tasty Pulao which comes to my rescue on any Working day. It has an awesome aroma. I prepare this at least once in a week with slight variations. Now let’s get started.

3. Mix everything well, Now add in Soaked Basmati Rice and fry for another 2 mins.

Vegetable Pulao | Vegetable Pulao in Pressure Cooker
Standard 1 cup measures 240 ml
Ingredients
- Basmati Rice – 1 cup
- Onion – 2
- Green Chilli – 3
- Ginger Garlic paste – 1 tbsp
- Mint +coriander leaves – ½ cup tightly packed
- Capsicum – ¼ cup
- Carrot – ¼ cup
- Beans – ¼ cup
- Green Peas – ¼ cup
- Water – 1 ¼ cup
- Salt as needed
- Lemon Juice from ½ lemon
To Temper
- Ghee/Oil – 1 tbsp
- Fennel Seeds – 1 tsp
- Bay Leaves – 2
- Cloves – 2
- Cinnamon stick – ½ inch piece
Instructions
- Wash the Basmati Rice and soak it for 30 mins. Heat a pressure cooker with 1 tbsp of oil or Ghee add the Tempering ingredients let a nice aroma comes and then add in Green Chilli and onions.
- Sauté until transparent and then add in ginger garlic paste fry till the raw smell leaves next add in the Mint and Coriander leaves sauté till they shrink, Next add in all the vegetables.
- Mix everything well, Now add in Soaked Basmati Rice and fry for another 2 mins.
- Add-in the Water, Salt, and Lemon Juice. Let it come to a boil. Now close the pressure cooker and put the whistle when the steam comes out. Cook for 1 whistle or about 3 minutes.
- Wait till the pressure gets released by itself and then open the cooker. Carefully fluff with Rice and then serve hot
Notes
I used Frozen peas, Fresh peas can also be used.
Serve hot with any Raita.
Water can be replaced with Coconut Milk for a delicious pulao.
