Imelletty perunalaatikko | Potato Casserole

Imelletty perunalaatikko is a traditional Finnish dish made with mashed potato and usually served for Christmas dinner. The dish is made as a sweetened version.

Standard 1 cup measures 240 ml

Ingredients

  • 1 Potato big
  • ½ cup Heavy cream
  • 1 Egg
  • Butter as needed
  • 2 tbsp Bread Crumb powder
  • Salt as needed
  • 1 tbsp Pepper
  • 1 tbsp Chilli flakes

Instructions 

  • In a pressure cooker add in the roughly chopped potatoes and pressure cook for 4 whistles. Once it is cooled remove the skin from the potato and finely mash it.
  • Set the mashes potatoes aside. In a mixing bowl add in cream . Beat the cream using an electric beater until it is creamy and soft .It will take around 2 mins in medium speed.
  • Next add in the egg and beat once again until the egg and cream are well incorporated together. Now add in Chill flakes, Pepper and Salt, and then add in the mashed potato.
  • Beat once again so that all the ingredients are well combined. Line a casserole or any oven safe bowl and pour in the ingredients sprinkle in some cheese and bread powder in the top. Preheat the oven at 180 Deg C for about 10 mins and the bake for about 30 mins. Serve hot.

Notes

Serve as a breakfast or as a snack.
Usually the dish is prepared in a casserole but I used my muffins tins for convenience.
If you prefer a sweet version add in molasses and honey instead of chilli flakes and pepper.
