Take your potatoes and wash them really well. Now take a peeler and peel the potatoes. Finely chop it into small cubes. Similarly, take crushed garlic and curry leaves Take a Kadai and add oil, Once it’s hot add in curry leaves crushed garlic, and Hing
Saute for a min or so, and then add in Cubed potatoes
Next add in Chilli powder, Salt, and Turmeric powder
Mix everything well and cook till the potatoes become golden brown in color.

Continue the entire process in a low flame or it might get burnt in the bottom.
Very less oil is required for this potato fry. Stir once in every two minutes.
