Heat a pan with oil once its hot add in the mustard seeds. Let it splutter. Next add in the Urad Dal and Channa Dal.
Saute till it is golden. Next add in the Dry Red Chilli and roasted peanuts. Saute for few secs and then add in the Curry leaves.
Saute and then add in the chopped garlic pods. Saute til it turn slightly golden.
Next add in the thinly sliced onions. Cook till it turns glossy. Then add in the red chilli powder, Garam Masala, Turmeric powder and the required Salt.
Mix well and cook till the raw smell of the masala leaves and then add in the cooked and cooled Rice. Give a good mix and cook for 2 mins in a low flame.
Finally garnish with coriander leaves and switch off.
