Lemon Rice

Lemon flavored rice is an instant rice that can be prepared in just less than 10 mins.

Standard 1 cup measures 240 ml

Ingredients

  • Cooked Rice – 1 cup
  • Oil – 1 tbsp
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Channa Dal – 1 tsp
  • Roasted Peanuts – 2 tbsp
  • Cashew nuts – 4-5 broken
  • Green Chilli – 2
  • Dry Red chilli – 3
  • Turmeric powder - ½ tsp
  • Salt as needed
  • Lemon juice – 2 tbsp
  • Curry Leaves a spring

Instructions 

  • In a Kadai add in the oil once it heats up add in the Mustard Seeds, Cumin seeds,Channa Dal let it splutter and then add in the Roasted Peanuts and Cashew nuts.
  • Then add the green chilli, dry red chilli and curry leaves saute in a medium flame for a minute. Next add Turmeric powder.
  • Mix well and then add the required salt and lemon juice.
  • Cook in a low flame for a minute and then switch off the stove. Now add the cooked rice and mix evenly. Lemon rice is ready.

Notes

  • Goes well with Potato Fry or any fryms.
  •  Makes a perfect lunch box dish.
  •  You can also use leftover rice
