Egg Kothu Idiyappam

Egg Kothu Idiyappam is a yummy spicier version of idiyappam where it is cooked with indian spices and scrambled eggs. Makes it really yummy

Standard 1 cup measures 240 ml

Ingredients

  • 1 cup Cooked Sevai/Idiyappam
  • 1 Onion
  • 1 tsp Ginger Garlic paste
  • 1 Tomato
  • 1 tsp Chilli powder
  • ½ tsp Garam Masala
  • ¼ tsp Turmeric powder
  • Salt as needed
  • 3 Egg
  • Coriander leaves to garnish

To Temper:

  • 1 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1 tsp Urad Dal – 1 tsp
  • 1 tsp Cumin Seeds/Jeera
  • 1 spring Curry Leaves a spring

Instructions 

  • Heat a pan and add in oil once it heats up add in the ingredients under To Temper table one by one. Now add in the chopped onions and sauté until glossy. Next add in Ginger garlic paste cook until the raw smell leaves then add in chopped tomatoes cook till it is fully done.
  • Now add in all the Masala powders. Chilli powder, Garam Masala, Turmeric powder and Salt give a good mix. Cook for a min and then move all the contents to one corner of a kadai and now break open the eggs and stir fry it, once eggs are cooked mix everything with the masala.
  • Finally add in the cooked Sevai and mix well. Garnish with Coriander leaves and switch off the flame.

Notes

  • The Eggs can also be cooked separately in another Pan and then added to the Masala.
