Instructions
For Kozhukattai Outer Dough
Heat a sauce pan with Water, To this add in Salt and sesame oil.
Wait till the Water comes to a boil.
In another bowl add in the Idiyappam Flour (Raw Rice flour) or Kozhukattai flour and keep it ready. Add in the boiling water in small batches ,with the help of a ladle or whisk keep on stirring and mixing the water till necessary and the dough is very smooth.
Allow the dough to cool down till the heat is bearable .the start kneading the dough to a soft ball. Roll it into very small sized balls out of all the doughs.
For Kozhukattai Stuffing:
In a pan add in the grated coconut .Saute in a low flame until the moisture is completely gone. It might take 3 mins in low flame.Next add in ⅓ cup Sweetened Condensed Milk,
Combine everything together. Add in the beetroot juice and Rose essence together .
Mix well and cook until the mixture thickens , If you hold a ladoo it should hold the shape that is the correct consistency. Switch off at this Stage . Also the mixture thickens a little as it cools down.
How to Shape the Rose Kozhukattai:
Take a kozhukattai and press it in between your palms or roll it into a very thin disc. Repeat this for 3 such discs and place the discs such that the corners are overlapping each other.Keep the prepared filling above the kozhukattai.
Now roll it so that it resembles a rose bud.
To cook the Kozhukattai
Grease a idli pan with oil or use any steamer . Place the prepare Rose kozhukattai and steam cook in a medium flame for about 8 mins.
Delicious Rose kozhukattai is now ready to be served.

Notes
You can also use store bought kozhukattai flour or idiyappam flour for preparing the kozhukattai.
Use red food color for a bright red colour.
The colour of the filling will reduce a little after its being cooked ,so adjust it accordingly.
