Hamantash Cookie is a Jewish cookie that is triangular n shape and has a filling in the center. The cookie is circular one and it is folded to achieve a triangular shape.
In a mixing bowl add in powdered Sugar and soft unsalted butter. Cream together and mix well.
Add-in Vanilla essence and Lemon zest mix well.
Now add in all-purpose flour, bring the dough together to form a soft dough. Cling wrap and put in the fridge for 30 mins.
Dust the working surface with flour and spread using a rolling pin. Using a cookie cutter cut into circles.
Now spoon the filling and fold the cookies. Make sure it is sealed well on all sides. Preheat the oven at 180C for 10 mins and bake for 12-15 mins are until the cookies become golden.
Notes
Traditionally the cookies use a filling with Poppy seeds and nuts.
But I have used Jam. Use a small quantity and make sure the edges are sealed properly otherwise the filling might fudge out.
