In a measuring cup add the Almond milk or any other vegan milk. To this add in the apple cider vinegar or Lemon Juice. Combine and let it rest for 5 mins. The milk will curdle by this time and you will get the buttermilk.
Next add oil.
And then add in the maple syrup.
Add in pure vanilla extract.
whisk everything togther for a homogenous mixture and set aside.
In another mixing bowl sift in the all-purpose flour. To this, add the baking powder and salt. Whisk everything together,
Next add the wet ingredients slowly in batches. Combine into a smooth batter. It's okay even if there are a few lumps.
Heat a skillet or griddle. When it is on medium heat brush it with little oil or vegan butter. Pour about ¼ cup of the batter over the skillet for 1 pancake. Slowly you see the bubbles on top of the pancake. Wait for 1 -2 mins until the bubbles pop up.
Flip and cook the other side for another 1 mins and remove from the skillet.
Delicious Vegan pancake is now ready. Serve with a drizzle of honey or maple syrup and enjoy.
