Vegan pancakes

Fluffy vegan pancakes are so soft, light, and made with simple pantry ingredients. makes a quick kid's friendly breakfast.

Equipment

  • Mixing Bowl
  • Measuring cups
  • Skillet

Ingredients

  • 1 cup Almond Milk
  • 2 tsp Lemon Juice or apple cider vinegar
  • 1 cup all purpose flour
  • 1 tbsp Baking powder
  • ¼ tsp Salt
  • 1 tbsp Maple Syrup
  • 1 tbsp Oil

Instructions 

  • In a measuring cup add the Almond milk or any other vegan milk. To this add in the apple cider vinegar or Lemon Juice. Combine and let it rest for 5 mins. The milk will curdle by this time and you will get the buttermilk.
  • Next add oil.
  • And then add in the maple syrup.
  • Add in pure vanilla extract.
  • whisk everything togther for a homogenous mixture and set aside.
  • In another mixing bowl sift in the all-purpose flour. To this, add the baking powder and salt. Whisk everything together,
  • Next add the wet ingredients slowly in batches. Combine into a smooth batter. It's okay even if there are a few lumps.
  • Heat a skillet or griddle. When it is on medium heat brush it with little oil or vegan butter. Pour about ¼ cup of the batter over the skillet for 1 pancake. Slowly you see the bubbles on top of the pancake. Wait for 1 -2 mins until the bubbles pop up.
  • Flip and cook the other side for another 1 mins and remove from the skillet.
  • Delicious Vegan pancake is now ready. Serve with a drizzle of honey or maple syrup and enjoy.
