Masala Vada

Masala Vada or Paruppu Vada is a very popular evening snack recipe in south India.It is found almost in all the tea shops. It goes well with tea or coffee.

Standard 1 cup measures 240 ml

Ingredients

  • 1 cup Channa Dal
  • 3 Garlic pods
  • 3 Dry Red Chilli
  • 1 spring Curry Leaves a spring
  • 1 Onion
  • 1 Green Chilli
  • 2 Dry Red Chilli
  • Ginger a small piece
  • 4 Garlic pods
  • 1 tsp Fennel Seeds
  • Hing a generous pinch
  • Salt as needed
  • Oil for deep frying

Instructions 

  • Wash and soak the channa dal for 2 – 3 hours.

  • After soaking drain the channa dal and add this to the blender. In the blender add in garlic pods, dry red chili, Fennel Seeds, and a small piece of ginger.

  • Blend to a coarse paste.

  • Transfer to a bowl. Next, add in the green chili, Coriander leaves, chopped onions, few channa dal as a whole and required Salt

  • Add in Hing and Salt. Mix everything together. Shape the vada.

  • Meanwhile, heat oil for deep frying. Once the oil is hot check by dropping a small piece if it comes up the oil is ready. Add the vada and deep fry in a medium flame until it’s cooked on both sides.

  • Drain and set aside in a paper towel to remove the excess oil.

Notes

  • Flatten the vada well ,So that it will be nice and crispy.
  • Don’t cook in a high flame. The outside might change in colour but inside it might remain un cooked.
  • Goes well with coconut chutney and either tea or coffee.
