Masala Vada or Paruppu Vada is a very popular evening snack recipe in south India.It is found almost in all the tea shops. It goes well with tea or coffee.
After soaking drain the channa dal and add this to the blender. In the blender add in garlic pods, dry red chili, Fennel Seeds, and a small piece of ginger.
Blend to a coarse paste.
Transfer to a bowl. Next, add in the green chili, Coriander leaves, chopped onions, few channa dal as a whole and required Salt
Add in Hing and Salt. Mix everything together. Shape the vada.
Meanwhile, heat oil for deep frying. Once the oil is hot check by dropping a small piece if it comes up the oil is ready. Add the vada and deep fry in a medium flame until it’s cooked on both sides.
Drain and set aside in a paper towel to remove the excess oil.

Flatten the vada well ,So that it will be nice and crispy.
Don’t cook in a high flame. The outside might change in colour but inside it might remain un cooked.
Goes well with coconut chutney and either tea or coffee.
