Badam Kheer

Badam Kheer is a simple and delicious kheer which is apt for any day. Perfect dessert after meal when served chilled

Standard 1 cup measures 240 ml

Ingredients

  • ½ lit Full Fat Milk
  • 15 Almonds /Badam
  • Kesar | Saffron a generous pinch
  • 2 tbsp Freshly grated coconut
  • 3 Cardamom Pods
  • cup Sugar
  • 1 tsp Ghee
  • Cashew/ raisins or any nuts to garnish

Instructions 

  • Bring in Water to boil, once it comes to a boil switch off the flame and soak in the almonds, let them rest for 2 hours. After 2 hours press the almonds the skin will come out easily. Likewise peel the skin of all the almonds and set aside. In a blender add in the skin peeled almonds, saffron, coconut and cardamom.
  • To this add in few tbsp. of milk and blend everything to form a fine paste and set aside. In a sauce pan add in the milk and let it boil.
  • Allow it to simmer and let the milk get reduced a little, at this stage add in the ground almond paste to the milk and mix well. Cook for 5 mins and then add in the required sugar.
  • Mix well and simmer for another 5 mins and then switch off the flame. In a pan add in the ghee and fry the nuts till golden brown add the ghee fried nuts to the prepared almond kheer. Almond kheer is now ready .Chill it for few hours and serve chilled.

Notes

  •  Adjust the amount of sugar as per your preference.
  •  Don’t add too much saffron as it overpowers and spoil the drink.
  •  Serve chilled for best results
