Remove the seeds from the jackfruits. Chop them roughly and then add it to a blender.
To the blender add in the cardamom pods and the Jaggery. Blend well to a fine puree without adding water.
To the puree add in the Salt ,Cooking soda and Dry Ginger powder mix well. Next add in the wheat flour in batches and mix well to form a loose dough.
The dough consistency should be such that it should be non sticky and dip your hands in water and try to pinch a small ball it should come easily without sticking. If you feel the dough is sticky you can add in more wheat flour and mix well. Heat oil for deep frying.
Once the oil is hot ,pinch in small portions of the dough and deep fry in a medium flame until its fully cooked and golden brown .Once its cooked remove from the oil and drain in paper towel serve hot.

Makes a good evening snack.
You can prepare the batter and deep fry whenever needed. The batter stays good for upto a week in fridge.
