Carrot Beans Poriyal

 Carrot Beans Poriyal is one common lunch side dish that we prepare for everyday cooking.It goes well with rice and sambar

Standard 1 cup measures 240 ml

Ingredients

  • Onion – 1
  • Carrot – 2
  • Beans – 15
  • Turmeric powder – ½ tsp
  • Salt as needed
  • Water – ½ cup
  • Oil – 1 tbsp
  • Mustard seeds – ½ tsp
  • Cumin Seeds – ½ tsp
  • Curry Leaves a spring

To Grind:

  • Coconut – ¼ cup
  • Dry Red Chili – 4
  • Garlic pods - 5

Instructions 

  • In a Kadai add in oil once it heats up add in Mustard seeds and Cumin seeds ,let it splutter and then add in curry leaves saute and then add in chopped onions ,cook till they turn glossy. Next add in the chopped Carrot and Beans mix well.
  • Add in the required salt and turmeric powder mix well and then add in the water. Cook till the carrot and beans are done they become completely dry without any water.
  • Meanwhile in a blender grind the coconut, dry red chilli and garlic pods together to a coarse mixture. Add this to the cooked beans and carrot saute in a low flame for 5 mins and then switch off the flame.

Notes

  •  Goes well with Rice and Sambar.
  •  Replace Dry red chilli with green chilli if you prefer.
