Mango Upside Down Cake

Mango Upside Down Cake is made by layering mango slices in the bottom and cake on top I used the seasonal Mangoes to make this cake.

Standard 1 cup measures 240 ml

Ingredients

  • All-purpose flour – 1 cup
  • Baking powder – ½ tsp
  • Sugar – ½ cup
  • Butter – 115 gms
  • Eggs - 2
  • Vanilla essence – 1 tsp
  • Salt a pinch
  • Tutti Frutii or glazed cherries – ½ cup optional
  • Mangoes Sliced – 1 cup

Instructions 

  • Sift together Flour, Baking powder and Salt thrice and set aside. In a mixing bowl add in soft unsalted butter and Sugar cream it using an electric beater or stand mixer until well combined.
  • To this break open an egg and beat well next break open another egg and add Vanilla essence beat well until well combined.
  • Prepare a cake pan, now arrange the cake pan with sliced Mangoes Roughly throw in the tutti frutti.
  • Now pour the prepared cake batter in the baking pan ,.Preheat the oven at 180 Deg C for about 10 mins and then bake at 180 Deg C for about 30-35 mins or until a tooth pick when inserted comes out clean. Allow the cake to cool completely and the slice and serve.

Notes

  • The baking time may vary from oven to oven.
  • Pineapple, apple can also be used to prepare the upside down cake.
  • I used the seasonal Mangoes.
