In a mixing bowl add in Water ,Vanilla essence, Lemon juice and oil Mix everything well using a whisk.
Add in the powdered sugar
Mix well until the sugar dissolves.
Sift together All-purpose flour ,espresso powder, baking powder, baking soda and salt.
Next add in the dry ingredient to the wet ingredient in batches and fold gently with a spatula make sure there are no lumps.
Next add in the Cocoa powder and fold gently. You can sift the cocoa powder along with the flour itself. I missed adding at that time and hence added now.
Line a baking tray with parchment paper and pour in the prepared cake batter to the pan.
Preheat the oven at 356 F (180 deg ) for about 10 mins. Bake in 180 deg C for about 30 mins or until a tooth pick when inserted in the middle of the cake comes out clean. Allow the cake to cool completely.
Melt Chocolate in Double Boiler Method
In a sauce pan add water and bring it to a boil . Now place a heat safe bowl on top pf the sauce pan and add in the chocolate.
Make sure the bowl do not touch the water.
Slowly chocolate starts to melts.
When the chocolate is melted half way you may switch off the flame. Chocolate melts in the residual heat. Easy melted chocolate with the Double boiler method.
Decorate the Chocolate Cake
Spread the melted chocolate over the cooled cake.
Top the cake with your favorite sprinkles or chopped nuts. Allow the chocolate to dry completely. Vegan Chocolate cake is now ready for your birthdays or any special occasions.

Baking time may vary from oven to oven check your user manual instructions for that.
You can also add sugar without powdering but it will take time to get dissolved so I used powdered sugar.
Cake stays good for more than a week even without refrigerating.
Lemon juice can also be replace with white vinegar
