Heat ghee in a pan add in cashew nuts and roast till golden and then set aside. Remove it and add in the grated beetroot.
Roast till the raw smell leaves and when it is almost cooked switch off the stove and blend it to a fine paste in the blender.
Soak the sago in water for 15 mins and then in a pan add in milk and the soaked sago and continue cooking.
Meanwhile add in the sugar and mix well. When the sago is cooked completely add in the cardamom powder and mix well.
Now add in the beetroot puree to the kheer and mix well, simmer it for few mins and the switch off. Finally add in the ghee fried nuts. Beetroot Sago kheer is now ready.
Notes
· You can add in Condensed milk also.· Serve as an after meal dessert.
