Sweet Corn Soup

Sweet Corn Soup is a great option for a wholesome meal or dinner. The sweetness from the corn balance greately with other veggies.

Standard 1 cup measures 240 ml

Ingredients

  • Sweet Corn – ½ cup
  • Water – ¼ cup + 1 cup
  • Green Peas – ¼ cup
  • Capsicum – ¼ cup
  • Broccoli florets – ¼ cup
  • Butter – 1 tbsp
  • Salt as needed
  • Vinegar /Lemon juice – 1 tsp
  • Pepper as needed
  • Spring onions – 2 tbsp
  • For Corn Flour paste:
  • Corn flour – 2 tsp
  • Water – 3 tbsp

Instructions 

  • Take ¼ cup sweet corn in a blender and add in ¼ cup water, blend together to form a fine paste.
  • Take a kadai /pan heat it and add in butter let it melt to this add in the remaining ¼ cup Sweetcorn ,Green Peas, Capsicum and Broccoli florets. Sauté everything for 2 mins in a low flame.
  • Now add in 1 cup of water and also add in the ground sweet corn paste. Mix everything together and let it come to a boil.
  • Meanwhile prepare the corn flour paste, Add in the Cornflour and Water in a small bowl and form a paste add it to the boiling soup.
  • Simmer for a minute add in the sugar and pepper. Finally garnish with Spring onion florets and serve hot.
