In a mixing bowl add in Sugar and soft butter. Mix well and cream together till they are well combined.
In another bowl take the strawberry, mash it with a fork or blender, and set aside. Now add in Vanilla essence and Mashed Strawberry to the creamed sugar and butter and mix well.
Now add in Custard powder, Baking powder and All-purpose flour.
Mix well and bring everything together to form a soft dough. Refrigerate it for 10 mins and then divide the dough into equal cookie shaped balls and flatten it. Place it in a baking tray. Preheat the oven at 180 Deg C for about 10 mins and then bake at 180 Deg C for about 15-17 mins or till the bottom of the cookie turn golden brown.
Notes
The baking time may vary from oven to oven.
The cookie may be soft immediately after baking but will become crispy once it cools down.
