In a mixing bowl add in the Semolina, Brown sugar, and Curd.
Next add in the milk, Olive oil, and Salt.
Mix everything well with a whisk until everything is well combined and allow it to rest for 20 mins. Next, add in the vanilla essence and then add n the baking powder.
Next add the baking soda and then add in the chopped nuts. Mix well. Line a muffin tin with muffin liners.
Scoop in an equal amount of batter and fill the muffin liners to its ¾th. Top the batter with some chopped nuts ,I used Pistachios. Preheat the oven at 180 Deg C for 10 mins and then bake it at 180 Deg for 25 mins. Allow it to cool completely and then store.
Notes
The baking time may vary from oven to oven and hence keep a check after 20 mins.
Keep good for 3 days. Store in refrigerator.
Use any sweetener or nuts of your choice.
