Carrot Halwa | Gajar Halwa

Carrot Halwa is a popular Winter dessert in the northern parts of the India. It is usually prepared with juicy red carrots

Standard 1 cup measures 240 ml

Ingredients

  • ½ kg Carrot
  • 2 cups Milk
  • ¼ cup Sugar
  • ½ tsp Cardamom powder
  • 4 tbsp Ghee
  • 8 Cashew nuts
  • 10 Raisins

Instructions 

  • Peel the skin of the carrots and chop the top and bottom portion of the carrots. You can then grate the carrot. But I was preparing in a large quantity and hence I used my grater.
  • Once the carrot is completely grated. Heat a pan with 1 tbsp of ghee and then add in the grated carrots. Sauté for 5 mins in a low flame.
  • Next add in the milk and cook in a medium flame. Keep stirring don’t let it get burnt. When the halwa starts to get thick add in the cardamom powder and mix well.
  • Next add in the sugar, the halwa tends to get loosen as the sugar melts, keep stirring. Add in the ghee and keep stirring,
  • Stir and cook until the halwa gets thick and start leaving the sides of the pan.
  • Heat another pan with 1 tbsp ghee and then add in the cashew nuts and raisins and let them get golden brown remove them from the flame and add it to the halwa along with the ghee.
  • Mix everything together and switch off the flame.

Notes

Tastes best when served hot or cold.
You can add khoya/Mawa ,it makes the halwa richer and creamier.
Adjust the sugar as per your taste preference and the sweetness of the carrots.
