Aubergine Roast | Egg Plant Roast

Aubergine Roast is an easy and simple lunch side dish with Eggplant. It is a very quick and delicious dish to go with Rice.

Standard 1 cup measures 240 ml

Ingredients

  • Aubergine / Egg Plant - 1
  • Chilli powder – 1 tbsp
  • Salt as needed
  • Hing/Asafoetida a pinch
  • Oil – 1-2 tbsp

Instructions 

  • Chop the Aubergine into cubes. Heat oil in a pan, once it heats up add in the Hing and cubed Aubergine. Toss it well after 2 mins add in the chilli powder and Salt.
  • Mix everything together and keep cooking in a low flame until done. Keep stirring in between else it will stick to the pan. Switch off the flame once done and serve with steamed Rice and Rasam.

Notes

It can be prepared in just 10-15 mins with minimal work.
Perfect for a working day Lunch box.
Pairs well with Steamed Rice and Rasam.
