Blueberry Turnovers

Blueberry Turnovers is an easy dessert made with puff pastry in an air fryer or Oven. It also has a delicious blueberry compote as a filling.

Standard 1 cup measures 240 ml

Equipment

  • Airfryer or OTG

Ingredients

  • ½ cup Blueberry
  • ¼ cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1 tsp Lemon Juice

Other Ingredients

  • 1 Sheet Puff Pastry
  • 1 Egg
  • 1 tbsp Water
  • Flour for dusting

For the Glaze

  • ½ cup Confectioners Sugar
  • 1 tbsp Milk
  • 1 tsp Vanilla Extract

Instructions 

Prepare Blueberry Filling

  • In a saucepan add fresh blueberries.
  • To this add granulated Sugar and Vanilla extract.
  • Heat over a medium flame. The sugar melts slowly and the blueberry starts to get mushy.
  • Stir and cook until the mixture is blubbery and slightly thickened.
  • Switch off and add lemon juice. Let it cool down a bit. Meanwhile start preparing the puff pastry.

Prepare the Puff Pastry

  • Dust the working area with flour and then unroll the thawed puff pastry. Slightly roll with a rolling pin and flatten the puff pastry.
  • Cut them into individual square portions.

Shape the Turnovers

  • Place 1-2 tbsp pf the prepared blueberry filling in the center of the square.
  • Close the puff pastry in a triangle shape and seal the edges. Using a fork and seal the edges once again by gently pressing down.
  • Puff pastry is now ready with the blueberry filling.

Prepare The Egg Wash.

  • Break open an egg, to this add 1 tbsp of water and whisk well until combined. Egg wash is now ready.

Air fryer Method

  • Preheat the airfyer at 400 F / 200 C for 5 mins.
  • To the preheated air fryer basket line, a parchment paper and place the prepared turnovers.
  • Brush each turnover with the egg wash all over.
  • Air fry at 356 F / 180 C for 12 mins or until the pastry turns golden.

Oven Method

  • Preheat the oven at 400 F / 200 Deg C for 10 mins.
  • Line a baking tray with parchment paper and place the prepared turnovers.
  • Brush each turnover with the egg wash all over.
  • Bake at 356 F / 180 C for 20-22 mins or until the pastry turns golden.

Prepare Glaze

  • In a mixing bowl add confectioners' sugar and mix well until you get a thick glaze. Increase or decrease the milk to bring the glaze to a pourable consistency.
  • Gently drizzle them over the turnovers and serve. Blueberry Turnovers are now ready.

Notes

  • Always use egg wash for a golden baked puff pastry.
If you don't want to include eggs you may use milk as an alternative.
Brush over milk or melted butter over the puff pastry.
Let the prepared blueberry filling cool down a bit before adding to the puff pastry. This ensures even cooking.
You may also prepare the blueberry filling and stuff in the puff pastry and freeze. This is an easy prep work and make the turnovers as and when required.
Always handle the puff pastry chilled. You may thaw them as needed and put them in the fridge untill you start baking.
Don't over fill the puff pastry with the turnovers. This results in smudging of the filling.
