Soak Basmati Rice in Water for 30 mins. Heat ghee in a pan discard the excess water and roast the soaked basmati rice in ghee for 3 mins in a very low flame and set aside.
In the remaining ghee fry the cashew nuts and raisins till golden brown and set aisde.In the same pan add in Fennel Seeds, Bay Leaves, Cloves, Cardamom and Star Anise. Fry for a min.
Add the sliced onions and green chilli, sauté till they turn slice golden remove few onions to garnish and set aside. Next add the ginger garlic paste and saute till the raw smell leaves.
Now add the chopped veggies and saute for 2 mins.
Next add the ghee roasted basmati Rice, Required Salt and Lemon Juice .Cook for another 2 mins
Close the pan and cook till the water is completely absorbed and the rice is cooked. Ghee rice is now ready. Garnish with the caramelized onions and nuts while serving.
Notes
· Serve with any Raita and Chicken Kuruma.· You can skip the vegetables if you don’t prefer.· Instead of cooking in an open pot the same can be cooked in a pressure cooker too.· Add extra ghee if you prefer.
