In a mixing bowl add in the ripe banana and mash well with a fork. Alternatively, you may use a masher also.
Next, add ⅓ cup of oil. You may use any oil as you prefer. I am adding coconut oil.
To this add in 1 tp of Vanilla extract and mix well using a whisk
Take a sieve. To this add in 1 ¾ cup of White Flour.
Also add in 2 tsp of Baking powder, ½ tsp of Baking Soda.
Next, add in 1 tsp of Cinnamon powder. Adding cinnamon powder is totally optional but it gives a nice flavor to the banana bread.
Sieve everything together without any lumps. Next, add in ⅓ cup Cane sugar or Brown Sugar. If you prefer more sweetness you may increase it to ½ cup or ¾ cup.
Now using a spatula gently mix all the ingredients together. Do not over-mix.
If it mixture is very dry you may use 1 tbsp of Almond mix and combine everything. Add only if the mixture dry else you may skip.
Grease a loaf pan with oil and line it with parchment paper and transfer the batter. Tap it twice or thrice.
Preheat the oven 180 Deg C or 356 F for 10 mins. Bake at 180 Deg C or 356 F for 50 to 55 mins or until a toothpick when inserted comes out clean. Once it's baked wait for 20 to 30 mins and then remove the loaf from the baking tin. Peel the parchment paper. Let it cool down for few hours and then slice the banana bread.
