Chop the Potato pieces and Pressure cook for 3 whistles or until fully cooked. Once the pressure in the cooker subsides. Open the cooker and peel the skin of the Aloo. Peel the skin , chop and mash it and set aside.
Heat a pan and add oil once it heats up add in the ingredients under To Temper table one by one.
Now add in the chopped onions and sauté until glossy. Then add in Turmeric power and Salt mix well and then add in Ginger garlic paste and cook until the raw smell leaves.
Next add in Garam Masala and cumin/Jeera Powder and mix well.
Finally add mashed potato and combine everything.
Allow it to cook in low flame for 5 mins until everything is well combined and the masala is fully combined with the potato
Finally add in chopped coriander leaves and switch off the flame.
Notes
Tastes good with Steamed Rice and Keerai Masiyal or Sambar.
Grated coconut can also be added to enhance the taste.
