Chicken Roast is an easy appetizer recipe. All you need to do is just add all the masala to the chicken along with onion and tomato marinate and then cooked to perfection.
Clean the chicken and add it to a mixing bowl. Make sure all the chicken pieces are of a similar size to ensure even cooking.
Add chopped onion, tomato, ginger-garlic paste, curry leaves, and all the required spice powders to the chicken.
Mix everything well so the chicken is evenly coated with the spices. Let the chicken marinate for 1–2 hours for better flavor.
Heat oil in a heavy-bottomed pan. I’m using a cast-iron pan. Once the oil is hot, add the marinated chicken and cook over medium flame. Stir at regular intervals and let the chicken cook evenly.
The chicken will turn juicy and cook through in about 15–20 minutes. Finally, garnish with chopped coriander leaves and switch off the stove. Your juicy chicken roast is now ready with minimal effort.

Can add Fennel seeds powder for extra flavour.
Make sure you marinate for more time to get the chicken tender and flavours are absorbed.
