    Curry Leaves has numerous health benefits, it is very good for hair indeed. We always use curry leaves as a flavoring ingredient in our food. Nevertheless we tend to throw or set it aside in our plate. How about making a powder and had along with our daily dose of rice. Indeed Curry leaves powder along with a dash of ghee and white Rice makes an awesome combo.

    Few weeks back when I was ordering vegetables in big basket I clicked on Curry leaves twice and I dint notice that, so in spite of that ended up having ½ kg of Curry Leaves which is too much to store. I was then browsing for recipes with Curry leaves and I landed up here ,it was then I decided to make Curry Leaves powder. Now let’s get see how to prepare curry Leaves powder.

    Curry Leaves Powder

    Recipe Cuisine: South Indian |  Recipe Category : Breakfast/Dinner
    Prep Time: 30 mins | Cook Time :15 mins |Makes: 1 box |Author :Sharmila
    Ingredients:
    Curry Leaves - 2 cups
    Urad Dal - 1 cup
    Dry Red Chilli - 20
    Grated Coconut - ¼ cup
    Hing / Asefoetida - ½ tsp
    Salt as needed
    Step by step Method with pictures:
    1. Wash the curry leaves really well and allow it to dry it down completely.
    2. In a pan dry roast the urad dal until golden brown and then set it aside to cool down.
    3. Next dry roast the Red chillies until dark and the remove it to a plate to cool down.
    4. Dry roast the freshly grated coconut until a nice aroma comes and the it turn golden brown and the set it aside to cool down
    5. Finally dry roast the curry leaves until crisp and allow it to cool down completely.
    6. In a blender add in the Curry leaves, Dry Red Chilli, Coconut and required salt and blend it to a coarse powder.
    7. Next add in the Urad Dal and then blend everything to a fine powder. Allow it to cool down and then store in an air tight container.
    Notes:
    • Tastes good with white Rice and a dash of Ghee.
    • Using Curry Leaves powder, curry leaves rice can be made. By adding ghee and then temper the same and finally add curry powder give a good mix and then add in the rice and give a good mix.
    • Store the curry leaves powder in a fridge as we have added coconut to it.
