    Eggless Strawberry Cake is an easy and simple cake made with fresh Strawberries during the Winter. It is eggless and butterless.

    Eggless Strawberry Cake | Eggless and Butterless Strawberry Cake with step by step pictures. This is one easy and yummy strawberry cake prepared with minimal effort, without eggs or butter it turns out to be super delicious. Now let's see how to prepare Strawberry cake.

    How to prepare Eggless Strawberry Cake

    1.In a mixing bowl Sift together all propose flour, baking powder, baking soda. Combine everything and set aside.

    2. In another mixing bowl add granulated sugar and cooking oil.

    3. To this add in the yogurt. Use un flavored thick yogurt.

    4. Next, add in Milk and Vanilla extract. Combine everything together until the sugar dissolves.

    5. Now gently combine the dry and wet ingredients in batches. Combine with a spatula and do not over mix the batter.

    6. Add in ¾ cup chopped strawberries and fold into the batter.

    7. Line a 9 inch round baking pan with parchment paper and transfer the prepared cake batter. The batter is slightly thick.

    8. Add in a few sliced strawberries on top of the baking pan. Also, sprinkle in granulated sugar on top. This gives a nice finish to the cake after baking.

    9. Preheat the oven at 180 Deg C for about 10 mins and then bake at 180 Deg C for about 40-45 mins. Remove it from the oven and then allow it to cool completely and then slice.

    Serving Suggestions

    It is a perfect tea time snack. Goes well with a cup of chai (tea) and biscuits. Or serve it as an after meal dessert.

    Storage Options

    The cake is eggless and butterless. So it is best to consume within two days. Or you may store them in the fridge for 4 days.

    Ingredients

    • 2 cup All-purpose flour
    • 2 tsp Baking powder
    • ½ tsp Baking Soda
    • 1 cup Granulated Sugar + 1 tbsp for sprinkling
    • 1 cup Curd/Yogurt
    • ½ cup Oil
    • ¼ cup Milk
    • 1 tsp Vanilla Extract
    • ¾ cup Strawberry + 3 for topping

    The baking time may vary so check after 20 mins. Store in the refrigerator for more shelf life. Use good quality Strawberry.
