Eggless Vanilla Sponge Cake is a basic sponge cake that can be used as a base cake. It is perfect and as good as how we get it in the bakery.

But I have felt many a times the egg flavor is in the cakes when I have tasted in few shops. Also, egg is very important for the texture in the sponge cake, hence I was so content to find a perfect eggless sponge cake.
Ever since I posted the basic sponge cake recipe with eggs in blog I have got so many requests to post the eggless version and it took me few years to find the perfect recipe. I have tried many other versions too either the cake might crumble or not be perfect and somehow, I was not enough convinced.
Finally, I got the recipe here and gave a try it was just perfect and nobody can disagree with the texture. My hubby who is very difficult to convince, gave a nod for this cake.
Sponge cake is the basis for many, as while frosting the cakes also the first thing we look for a sponge cake. Sponge cake is very light and soft. Now let's see how to prepare Eggless Vanilla Sponge Cake

How to prepare Eggless Sponge Cake,
1.In a mixing bowl add in the sugar and room temperature butter. cream the butter and sugar together until light and creamy.
2.Next add in the Vanilla essence and Condensed milk to that and beat it with a hand mixer once again until it forms a homogenous mixture.
3.Now sift in the dry ingredients, flour, baking powder and baking soda together with a sieve and add it slowly to the wet ingredients.
4.Whisk everything together. Next, add in the hot milk. Let it not be boiling hot. Combine everything together with a hand mixer and form the batter.
5.Line a baking tin with parchment paper and then pour in the batter. Tap the baking pan once so that there are no air bubbles. Preheat the oven at 180 DEg C for 10 mins and then bake the cake at 180 Deg for about 50 mins.
6.Wait till the cake cools a little and then release the edges of the cake with a knife. Invert and then allow the cake to cool completely. Once it's completely cool. Slice and serve.
Perfect to be served for the evening tea.

Standard 1 cup measures 240 ml
Ingredients
- ½ cup Sugar

- 400 g Condensed Milk
- 2 tsp Vanilla Essence
- 1¾ cup All-purpose Flour / Maida
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1½ cup Hot Milk
