Last week instead of the usual super Market shopping hubby took me to a local Market nearby our house. Was totally amazed by the fresh products and stuffs. So when I saw this ready-made idiyappam I picked some as it would come handy for breakfast. So the next day itself I cooked it for breakfast and served it along with coconut milk ,Have shared a pic on my Instagram the same day morning ,So the next day hubby asked me for a Spicier versions and hence I tried this Egg Kothu sevai ,though I couldn’t eat due to my Easter Fasting ,Hubby enjoyed it totally .Happy me J

Recipe Instructions:
1. Heat a pan and add in oil once it heats up add in the ingredients under To Temper table one by one.
Now add in the chopped onions and sauté until glossy.
2. Next add in Ginger garlic paste cook until the raw smell leaves.
then add in chopped tomatoes cook till it is fully done.
3. Now add in all the Masala powders. Chilli powder, Garam Masala, Turmeric powder and Salt give a good mix.
Cook for a min and then move all the contents to one corner of a kadai and now break open the eggs and stir fry it, once eggs are cooked mix everything with the masala.
4. Finally add in the cooked Sevai and mix well.
Garnish with Coriander leaves and switch off the flame.
Serve hot with Raita or Yogurt with some lemon wedges.

Egg Kothu Idiyappam
Standard 1 cup measures 240 ml
Ingredients
- 1 cup Cooked Sevai/Idiyappam
- 1 Onion
- 1 tsp Ginger Garlic paste
- 1 Tomato
- 1 tsp Chilli powder
- ½ tsp Garam Masala
- ¼ tsp Turmeric powder
- Salt as needed
- 3 Egg
- Coriander leaves to garnish
To Temper:
- 1 tbsp Oil
- 1 tsp Mustard Seeds
- 1 tsp Urad Dal
- 1 tsp Cumin Seeds/Jeera
- 1 sprig Curry Leaves

Notes

We get Instant sevai in almost all the supermarkets. All you have to do is add them to boiling water for 5 mins and then drain the water and use.
