What is Egg Puffs
Egg Puffs are a popular snack found in bakeries across India, particularly in Kerala. They are flaky, savory pastries filled with a spiced egg mixture and baked to golden perfection.
Bakery Style Egg Puffs
Egg Puff is a very popular snack in South India. It is common in bakeries or any other food joints. They are a common evening snack to go along with tea or coffee. It always tastes best when served hot with tea. The basic concept of the puffs remains the same, and the shape and then filling may vary from place to place.
Every food joints try to make them in their signature style.
Ingredients
Onions -Slice the Onions thinly and use them for the filling. I am using Red onions as they have a slightly sweet taste.
Oil - We use oil for preparing the onion masala. Use any basic cooking oil. I am using groundnut oil.
Green Chilli - Adds a nice spice element to the filling, feel free to skip it if you don't prefer it.
Spice powders - I am using basic Indian spice powders for the filling.
Tomato sauce - Give a sweet taste to the filling. It actually helps in balancing the taste with the other spice powders. It is the secret ingredient and do not skip adding it.
Puff Pastry - Use frozen puff pastry sheet. Thaw for 3-4 hours and then use.
Egg - Use fresh hard-boiled eggs.
How to make Egg Puffs
Prepare the filling:
Heat a pan with oil. Once its hot add crushed garlic and finely chopped green chilli . Saute for few secs.
Next add finely sliced onions.
Saute and cook until the onions are soft.
Next add tomato sauce.
And then add the spice powders. I am using chili powder, garam masala , Cumin powder, turmeric powder and the required salt.
Combine and cook everything together. Add few drops of water and cook for 2 mins. The masala is now ready switch off the stove and let it cool down.
Assemble the puffs:
Boil the eggs. Slice into two and keep them ready. Thaw the puff pastry sheet. Slice them into equal sized squares and keep them ready as well. Take a square and put 1 or 1.5 tbsp of the prepared masala.
Place one half of the boiled egg on top.
Seal all the edges and close the puffs.
Airfryer Method
Preheat the air fryer at 200 F / 400 C for 5 mins. Place the prepared puffs in air fryer basket. Prepare a egg wash by breaking open one egg also add 1 tbsp of water and whisk well.
Now brush the egg puffs with prepared egg wash.
Air fry at 180 C / 356 F for 12 mins.
Oven Method
Preheat the oven at 180 C / 356 F for 10 mins. Arrange the puffs in oven tray and brush with egg white.
Bake at 180 C / 356 F for 20-25 mins until the are cooked and golden.
Delicious egg puffs is now ready.
Tips & Variations
- Adjust the spiciness of the onion masala as per your preference.
- I shaped the egg puffs in the traditional square. You can also roll them or shape them in rectangles if you prefer.
- You can also add sweet corn or paneer to the onion masala if you prefer. They pair really well.
- For an even more indulgent treat, add a slice of cheese inside the puff along with the egg and masala.
Serving & Storing Suggestions
Egg Puffs taste best when served hot. The flaky puff pastry layers get soft as it cools down. So I recommend consuming them immediately after it's baked. Else always reheat before serving for a crisp egg puff. You can microwave it for a min. Or heat them in an air fryer or oven for 2 mins for heating.
Don't recommend freezing them as it contains hard-boiled eggs. You can store the onion masala for 1 week. But just before preparing assemble the eggs and onion masala in puff pastry and bake
