    Malai Broccoli - AirFryer & Oven

    Broccoli is sometimes not cooked often in Indian kitchens. It is an underrated vegetable. But you got to try this Malai Broccoli sometime for yourself and your option will definitely change.

    What is Malai Broccoli

    Malai is nothing but the yellowish clotted cream collected from milk. Boil your milk and leave it on the stovetop to cool down, the fat from the milk accumulates on the top like skin. We can collect this malai every day as we boil milk. Use full-fat milk for this. We can use malai for preparing homemade butter or Ghee (clarified butter). We can use this malai for cooking instead of cream.

    For Preparing Malai Broccoli we marinate the broccoli in a marinade made of malai, cream cheese, and yogurt along with spices. It's so flavorful and delicious. Perfect for any party or potluck menu.

    Ingredients

    Broccoli - Use fresh medium sized broccoli head.

    Malai or Cream - You can use homemade mali or store bought cream.

    Cream cheese and Cheese- Gives a nice cheese flavor to the broccoli.

    Ginger garlic paste - adds so much flavor. So don't skip them

    Yogurt - Base of the marinade. Use flavorless whole yogurt.

    Spice powders - We use pepper powder, cardamom powder, and Garam Masala.

    Salt and sugar - Both balance the taste.

    How to make Malai Broccoli

    Dissect the broccoli into small broccoli florets and immerse in warm water for 5 mins. After 5 mins remove the water and pat them dry with a kitchen towel.

    To this also add Cheese, ginger garlic paste, Cardamom powder, Pepper powder, Cumin powder, Salt, and Sugar.

    Combine everything until mixed.

    Add broccoli florets.

    Mix well and let the marinade coat over the broccoli florets. Let it marinate for 30 mins to 2 hours. You call also cling wrap and chill them in the fridge for marination.

    Take skewers, If using wooden skewers and dip them in hot water for 15 mins. If using steel skewers you may skip this step. Skew in the broccoli. You can also skip skewing and directly add to the air fryers.

    Preheat the air fryer to 400 F / 200 C for 5 mins. Spray oil in the air fryer baskets and arrange the broccoli skewers. Airfry at 356 F/ 180 C for 10 mins.

    Open and flip them halfway, spray little oil, and continue cooking.

    Airfryer Broccoli Florets are now ready.

    Tips & Suggestions

    • If you don't have an air fryer you can try the same recipe on the stovetop or oven.
    • If cooking in an oven preheat the oven. Bake them at 200 C for 20- 30 mins until the broccoli looks charred and the color changes to light golden.
    • Or you can use a grill pan and cook the broccoli on the stovetop.
    • I like to skew them into skewers, so it is easy to handle the broccoli while cooking.
    • You can add them to skewers or cook them by spreading them in the basket.
    • You can prepare the marinade a day before and prepare malai broccoli the next day.

    Serving Suggestions

    Goes well as an appetizer or starter. You can pair them with green chutney or ketchup mayonnaise. If you are on a low carb diet you can very well use them as a whole meal. Stuff them in a lettuce wrap and make a meal.

    Ingredients

    • 1 Broccoli head Medium sized
    • ½ cup Yogurt
    • 2 tbsp Heavy cream or Malai
    • ⅓ cup Cream Cheese
    • 2 tbsp Cheese
    • 1 tbsp ginger garlic paste
    • ½ tsp Garam Masala
    • ¼ tsp Pepper Powder
    • ½ tsp Cardamom powder
    • ¼ tsp Sugar
    • Salt as needed
    • Oil as needed
