Mushroom patties are a super easy and quick snack. They get cooked easily in the air fryer as well as stop top. Goes well as a snack or you may also use them in the burgers.

Mushroom patties vegan
A quick and easy patty made with mushroom and potato. They are perfect and hold their shape very well. It is easily customizable for a low carb or a keto diet as well. I am using vegan bread crumbs for binding the patties. For Keto or Low carb version, you may use nuts powder. They work well and I have tried them as well. Air fryer mushroom patties come very well with less oil.
Ingredients
Mushroom - I am using Button Mushrooms for the patties. You may also try cremini mushrooms took. Wash and pat dry the mushroom to remove the dirt particles and moisture and then use.
Potato - Use boiled and mashed potato. You can cook them on the stovetop or in Instant Pot.
Onion - use red or white onions.
Ginger- Adds a yummy flavor to the dish.
Spice Powders - Just the basic spice powders. I am using red chili powder, Garam Masala, Turmeric powder, and salt for taste.
Cilantro - Adds flavor to the patties.
Bread Crumbs - Gives a nice crunch to the patties and it helps in holding the shape of the patties.
Corn flour - Helps in binding the patties. Add 1 tbsp more if needed.
Cooking oil - Use as needed to brush the patties if cooking in an airfryer. Or if cooking in a skillet use 2 tbsp of oil.

How to make this recipe keto?
It is so easy. juts replace the breadcrumbs with nuts powder or Almond flour.
How to prevent my patties from falling apart?
Combine the ingredients evenly and shape the patties firmly. Place them in the refrigeration for 30 mins and then cook. This prevents the patties from falling apart. Make sure you add the exact measure of breadcrumbs and cornflour. If you find the mixture moist you may add in more breadcrumbs too.
How to make Mushroom Patties
Shape the Mushroom Patties
1.Heat a skillet with 1 tsp of oil. Once it's hot add in the crushed ginger saute for a min until the raw smell leaves. Next, add in the onions and cook till they are soft and pink.
2. Add in the sliced Mushrooms. The Mushrooms will leave the water and begin to cook. Cook for 2 -3 mins in medium flame. The mushrooms are now cooked.
3. Add the boiled and mashed potatoes. Combine everything and cook for a min.
4. Add in Chilli powder, Garam Masala, Turmeric powder, and the required salt.
5. Combine and cook for a min. Now the filling is ready. Add in finely chopped cilantro and switch off the stove and transfer to a mixing bowl. Let it cool down to a bit.
6. Next, add the Bread crumbs and cornflour. Combine everything.
7. Divide the prepared filling into 5-6 equal portions. Apply little oil to your palms and then take 1 portion and shape the patties. Refrigerate the patties for 30 mins. You can store up to 24 hours as well.

8. Heat a skillet with 2 tbsp of oil Let it heat up to medium-high heat. Place the patties and cook for 2-3 min on one side and then flip and cook on the other side for another 2 mins. Let the patties cook till crisp and golden on both sides.
9. Mushroom burger patty are ready on the stovetop. Remove from the skillet and place them in the paper tissue to absorb excess oil if any.

10. Preheat the air fryer to 392 F (200 deg C) for 5 mins. Now brush the basket with little oil or use a spray. Place the patties in the basket. Air fry the patties at 356 F (180 deg C) for 12 mins.
11. After 6 mins flip the mushroom patties and brush with oil and then air fry. Delicious and crispy air fryer mushroom burger patties are ready.
Tips & Variations
- If you feel the patties are still not holding the shape you can add more breadcrumbs.
- Always put the patties in the refrigerator. It helps in keeping them firm for a longer time.
- You can also add in more veggies like corn, carrot, and beans if you prefer.
- Mushroom patties freeze very well. You can do it as a part of your meal prep and fry the patties as and when needed.
- For a low carb mushroom burger, you may warp the patties in lettuce and serve them.
How to serve Mushroom Patty
You can serve them as an appetizer, lunch, or very well convert them into a burger.
Appetizer: If serving as a snack or appetizer you can serve them along with any dipping sauce. It goes well with Cilantro Chutney, Mayonaise, Sour cream, or even avocado cilantro sauce.
Lunch: For lunch, we can serve them alongside some salad. Or you can use some veggie sticks. Carrot, Cucumber goes perfect.
Burger: If making them for burgers you can shape them as wide patties. Stuff them between a burger bun along with lettuce, onions, tomato, and cheese if you prefer.
Storing Options
Always store the leftovers in the fridge for longer shelf life.
If I am going to finish off the patties within a week. I just shape the patties. Freeze them in a tray for 30 mins. Remove the patties from the tray and then place each patty between layers of parchment paper. Store them in air-tight containers or ziplock bags.
If storing for a longer time. I prefer freezing the patty. Cook the patties in the air fryer for 5 mins. or in a skillet for 2 mins o each side. and then let them cool completely. Then store them in layers of parchment paper in zip locks or air tight containers as before.
Just before using them, you may thaw the patties for 30 mins and then cook and enjoy.

Can I use an egg instead of breadcrumbs and cornflour?

Definitely, egg works well for binding the patties and hold them together without falling apart. Make sure your patties are dry without moisture. Else you may need more flour for binding them.
