Chicken Kofta Dum Biryani is a flavourful biryani that will definitely satisfy the Sunday ritual, yes Sundays are meant to be Biryani Day JKofta biryani can be prepared using either lamb or chicken I have used minced chicken for this recipe. Now let’s get started.

Chicken kofta biryani recipe
Method:
1.. In a mixing bowl add in the ingredients mentioned under the “Kofta” table except Corn flour and oil and mix well.
2. Now add in the corn flour and mix everything once gain and then divide the dough into equal sized balls
3.Heat an appe pan and drizzle in oil in it, now roll the kofta balls in corn flour and add the kofta balls in the appe pan turn on both the sides and cook till it’s done. Cook in medium flame.
4. Drain in paper towel and set aside. Cook Basmati Rice and set aside.(Click here how to cook basmati Rice for biryani).In a pan add in oil once its hot add in Bay Leaves ,Fennel seeds ,cloves and Cinnamon stick once it gives a nice aroma add in sliced onions.
5. Cook till it becomes brown, take half of the onion and set aside. Add in ginger garlic paste and cook till the raw smell leaves next add in the chopped mint and coriander leaves Cook till it shrinks.
6. Next add in Green Chillies and tomatoes and cook they are well mashed then add in Chilli powder, Garam Masala and Salt and then add in curd.
7. Mix well and the add in the cooked Chicken Kofta balls and then cook for another 5 mins in low flame.
8. Switch off the flame now the kofta gravy is ready, in luke mark milk add in Saffron threads and set aside, Take the cooked basmati rice and keep everything ready.
9. Now lets start layering for Dum Cooking. Take the Vessel which gonna be used for Dum Cooking, Let it be a heavy bottomed vessel. First add in the Kofta gravy, then add in a layer of cooked basmati rice and then sprinkle in the saffron milk.
10. Next layer in the fired onions and mint and coriander leaves Add in one more layer of basmati rice and then sprinkle saffron milk and then add in the remaining onion and the greens.
11. In a stove keep the dosa pan and then keep the layered vessel and close it with a tight lid and keep any weight so that it remains intact. Cook in medium flame for about 30 mins. Once done slowly fluff up with the fork, Chicken kofta Dum Biryani is now ready to be served.
Notes:
- Tastes best when served with any Raita.
- It would be an awesome and filling Sunday Lunch.

Standard 1 cup measures 240 ml
Ingredients
- 1 cup Basmati Rice
- Onion – 2 big
- Ginger Garlic paste – 1 tbsp
- Tomato – 2
- Mint +coriander leaves – ½ cup + 3 tbsp for layering
- Chilli powder – 1 tsp
- Garam Masla – 1 tsp
- Salt as needed
- Curd/Yogurt – 2 tbsp
- Saffron Milk – a pinch
- Luke Warm Milk – 2 tbsp
- Oil – 1 tbsp
- Fennel Seeds – 1 tsp
- Cloves-3
- Cardamom – 1
- Cinnamon stick – ½ piece inch
- Bay Leaves - 2
Kofta:
- Minced chicken – 250 gm
- Onion – 1 finely chopped
- Coriander Leaves a handful
- Chilli powder – 1 tsp
- Coriander Powder – 1 tsp
- Garam Masala -1 tsp
- Salt as needed
- Corn flour as needed
- Oil for frying
