    Queen Elizabeth cake is prepared mainly with desiccated coconut and Dates it is served along with Tea .

     

    Queen Elizabeth cake is prepared mainly with desiccated coconut and Dates it is served along with Tea .However as per wiki the cake is from Canada .The cake has a strong flavour of dates and coconut it is so moist and delicious. Now let’s get started.

    Step by step Method with pictures:

    1. Sift together Flour, Baking powder and Salt thrice and set aside. Chop the dates roughly and place it in a bowl and then to this add a cup of hot boiling water set it aside too.

     2. In a mixing bowl add in soft unsalted butter and Sugar cream it using an electric beater or stand mixer until well combined.

     

     3. To this break open an egg and beat well next break open another egg and add Vanilla essence beat well until well combined.

     

     4. Grind the dates which is soaked in water by discarding the water, Now add the ground dated to the prepared cake batter and fold well.

     

     5. Now pour the prepared cake batter in any prepared baking pan ,.Preheat the oven at 180 Deg C for about 10 mins and then bake at 180 Deg C for about 30-35 mins or until a tooth pick when inserted comes out clean. Allow the cake to cool completely and then prepare the icing. In a sauce pan add in the brown sugar, desiccated coconut, butter and heavy cream.

     

     6. Boil in a medium flame for about 3 mins and then switch off the flame.

     

     7. Now spread the prepared icing ouve the baked cake and then slice and serve.

    Standard 1 cup measures 240 ml

    Ingredients

    • All-purpose flour – 1 cup
    • Baking powder – ½ tsp
    • Sugar – ½ cup
    • Butter – 115 gms
    • Eggs - 2
    • Vanilla essence – 1 tsp
    • Salt a pinch
    • De-seeded Dates – 1 cup
    • Boiling water – 1 cup

    For Icing:

    • Desiccated Coconut – ½ cup
    • Brown Sugar – ⅓ cup
    • Butter – 2 tbsp
    • Heavy cream – 3 tbsp

    Notes

    • You can also add in some chopped walnuts along with the icing.
