    Semolina Muffins is an ideal bake with Sooji or Fine Rava, It is made with healthy ingredients which is perfect for the kids or toodlers.

    Semolina Muffins Recipe | Sooji Cupcakes |How to make cupcakes with Semolina with step by step pics. In my native there use to be a famous bakery “The Cake World” I have tasted a cupcake there which is different from the regular muffins, I was so sure it was not with the regular all-purpose flour and it took some 2 months for me to discover that it was made of semolina.

    The texture was so good and it will be topped with Almonds, I will share a pic of the same below soon. Since then I wanted to try cupcakes with Semolina. It was so perfect for my kids and me though.

      No butter, No sugar, No Maida, No Eggs Just some Semolina, Milk and curd together does all the magic.

    What is Semolina, Rava or Sooji 

    According to Quora, semolina is a coarsely ground powder of wheat or rice or corn, or any other ingredient. Also, semolina is way healthier than white flour.     In this recipe, I have used cane sugar, but it can be replaced with white sugar also If feeding for kids use palm sugar powder. So now let's see how to prepare Semolina Muffins

    How to Prepare Sooji Muffins, Pictorial

    1.In a mixing bowl add in the Semolina, Brown sugar, and Curd.

    2.Next add in the milk, Olive oil, and Salt.

    3.Mix everything well with a whisk until everything is well combined and allow it to rest for 20 mins. Next, add in the vanilla essence and then add n the baking powder.

    4.Next add the baking soda and then add in the chopped nuts. Mix well. Line a muffin tin with muffin liners.

    5.Scoop in an equal amount of batter and fill the muffin liners to its ¾th level. Top the batter with some chopped nuts, I used Pistachios. Preheat the oven at 180 Deg C for 10 mins and then bake it at 180 Deg for 25 mins. Allow it to cool completely and then store.

    Serving Suggestions:

    Enjoy as a snack. Goes well with some warm Milk.

    Standard 1 cup measures 240 ml

    Equipment

    Ingredients

    • ¼ cup + 2 tbsp Semolina / Sooji / Fine Rava
    • ¼ cup + 2 tbsp Brown Sugar
    • ¼ cup Curd – ¼ cup
    • Salt a pinch
    • ¼ cup + 2 tbsp Milk
    • 1 tsp Vanilla essence
    • 1 tbsp Olive oil
    • ¼ tsp Baking powder
    • ¼ tsp Baking Soda
    • 2 tbsp Nuts

    Instructions

    Notes

    The baking time may vary from oven to oven and hence keep a check after 20 mins.
    Keep good for 3 days. Store in refrigerator.
    Use any sweetener or nuts of your choice.
