Sweet Potato patties are an amazing entree or appetizer. It is a crispy outer surface and a soft inner part. The tasty is slightly sweet and is prefect to go with any dip or sauce.

Sweet Potato
Sweet Potato is a starchy sweet tasting root vegetable. It is like pinkish skin. The inner part is orange or pale yellow or even purple. The colors of the sweet potato are different. In India, we get only the pale yellow-colored light sweet potato with pinkish skin. However taste and texture wise all are similar.
Sweet Potatoes are rich in Vitamin A. It is really good for building immunity. It is also ideal for kids.
Ingredients
Sweet Potato - We can steam cook the Sweet potato in pressure cooker or Instant Pot and then peel the skin and use them.
Black beans - Are rich in protein. Use canned or dried black beans as you prefer. If using dried ones, make sure you soak them overnight and cook.
Onion - Use red onions. Chop them finely and use them. Gives a nice crunch to the patties.
Spice Powders - We use a mix of Indian spice powder. Feel free to change as per your taste.
Ginger and garlic - We use minced ginger and garlic. They give a fantastic flavor to the patties.
Cilantro - Use finely chopped Cilantro.
Oats Powder - We use Oats powder, which helps in binding the patties together. It also absorbs excess moisture.
Oil - Use any cooking oil you prefer.
Prep Work:
Steam cook the sweet potato and keep them ready.
If using canned black beans, drain the excess water, tap them dry in a tissue, and remove the excess moisture.
If using dried beans, soak them overnight and cook them in Instant Pot. Read the post for the detailed Instruction.
Chop the onion, Cilantro and keep them ready.
If you do not have oats powder. Roast them in a pan for 2 mins and grind to a coarse powder.
How to make Sweet Potato Black bean Patties
Add steamed sweet potato and the cooked or canned black beans in a mixing bowl. Make sure you pat the beans dry and remove the excess moisture.
Mash the beans and sweet potato using a potato masher. To this add finely chopped onions, Chopped cilantro. Also, add minced ginger and minced garlic.
Add the spice powders and salt. I am using Garam Masala, Coriander powder, and Cumin Powder.
Next, add the Oats Powder.
Combine everything together and bring it as soft dough. refrigerate it for 30 mins.
Divide the patties into equal portions. Pinch in part and shape them as patties. Shape the patties with all the dough and arrange them in a baking tray. Freeze them for 15 mins.
Air Fryer Method:
Preheat the air fryer to 200 C / 400 F for 5 mins. Spray in some oil and arrange the patties. Air fry at 180 C / 356 F for 12 mins. Flip once halfway and brush with oil as needed.
Stovetop Method:
Heat a cast iron pan with oil. Once the oil is hot drop in the patties and shallow fry in a medium flame.
Flip and cook both sides until the patties are crisp and golden.
Drain in paper towels once they are cooked
Sweet Potato and Black bean Patties are now ready.
Tips & Variations
- If you feel the patties are still not holding the shape you can add more oats powder.
- Always put the patties in the refrigerator. It helps in keeping them firm for a longer time.
- Instead of oats powder, you can also add Almond flour.
- As a part of meal prep, you can make the patties before hand. Before serving you may cook and use it during the weekdays.
Serving Suggestions
You can serve them as an appetizer, lunch, or very well convert them into a burger.
Appetizer: If serving as a snack or appetizer you can serve them along with any dipping sauce. It goes well with Cilantro Chutney, Mayonaise, Sour cream, or even avocado cilantro sauce.
Lunch: For lunch, we can serve them alongside some salad. Or you can use some veggie sticks. Carrot, Cucumber goes perfectly.
Burger: If making them for burgers you can shape them as wide patties. Stuff them between a burger bun along with lettuce, onions, tomato, and cheese if you prefer. For a healthier option wrap in lettuce leaves instead of burger buns and serve.
Storing Options
Always store the leftovers in the fridge for longer shelf life.
If I am going to finish off the patties within a week. I just shape the patties. Freeze them in a tray for 30 mins. Remove the patties from the tray and then place each patty between layers of parchment paper. Store them in air-tight containers or ziplock bags.
If storing for a longer time. I prefer freezing the patty. Cook the patties in the air fryer for 5 mins. or in a skillet for 2 mins o each side. and then let them cool completely. Then store them in layers of parchment paper in zip locks or air tight containers as before.
Just before using them, you may thaw the patties for 30 mins and then cook and enjoy.
