    Vegan Pancakes

    This quick and easy pancake makes a light, fluffy, extra delicious, easy-to-make breakfast pancakes in just 10 mins. It is dairy free and egg free too. You can easily customize them to Gluten free too by replacing them with gluten free flour.

    Fluffy Vegan Pancakes

    Fluffy Vegan Pancakes is an easy kid friendly breakfast. All it needs is the basic pantry ingredients. Make sure you beat the batter lightly and do not over mix for a soft and fluffy pancake.

    Ingredients

    Vegan Pancakes Ingredients

    Almond Milk - I am preparing the vegan version of the pancakes so I went ahead with Almond milk. You can also use coconut milk.

    Lemon Juice - We use lemon juice to curdle the almond milk and prepare the buttermilk. Instead of lemon juice, you can also use apple cider vinegar.

    All-purpose flour- I am using white flour for the pancakes.

    Baking powder - It is the baking powder that helps in achieving the fluffy texture of the pancakes. So make sure you add the mentioned quantity.

    Salt - A pinch of salt added enhances the taste of the pancakes.

    Oil - Adding melted coconut oil works well for the recipe. You can also use melted vegan butter if you prefer.

    Maple syrup - Added for the mild sweetness.

    Vanilla extract - Use pure vanilla extract.

    How to make fluffy pancakes with pancake mix?
    Pancake mix usually has the cooking instructions in the box itself. You can follow the recipe as per the instructions and mix the dry and wet ingredients together and prepare the pancake.
    How to serve pancake?
    Serve with a generous drizzle of maple syrup or honey along with fresh fruits.

    How to make Vegan pancakes

    1.In a measuring cup add the Almond milk or any other vegan milk. To this add in the apple cider vinegar or Lemon Juice. Combine and let it rest for 5 mins. The milk will curdle by this time and you will get the buttermilk.

    2. Next add oil or vegan butter( whichever you are using).

    3. And then add in the maple syrup.

    4. Add in pure vanilla extract.

    5. Whisk everything togther for a homogenous mixture and set aside.

    6. In another mixing bowl sift in the all-purpose flour. To this, add the baking powder and salt. Whisk everything together.

    7. Next, add the wet ingredients slowly in batches. Combine into a smooth batter. It's okay even if there are a few lumps.

    8. Heat a skillet or griddle. When it is on medium heat brush it with little oil or vegan butter. Pour about ¼ cup of the batter over the skillet for 1 pancake. Slowly you see the bubbles on top of the pancake. Wait for 1 -2 mins until the bubbles pop up.

    9. Flip and cook the other side for another 1 mins and remove from the skillet.

    10. Delicious Vegan pancake is now ready. Serve with a drizzle of honey or maple syrup and enjoy.

    Tips & Variations

    • You may replace Maple syrup with honey or any other sweeteners you prefer.
    • Never let the batter rest for a longer time Try to prepare the pancakes immediately.
    • The longer waiting time might turn the batter sour or you may not ever achieve the fluffy texture.

    How to freeze pancake?

    Pancakes are easy to freeze. Let the pancake cool down completely and then place them on parchment paper and freeze for 30 mins. After 30 mins you can divide them into portions and freeze them in zip lock bags are in any freezer container. Placing a parchment paper in between the pancakes helps in easily handling the pancakes without sticking to each other.

    You can reheat the pancakes in a microwave or just heat them in a skillet. Serve with a drizzle of maple syrup or honey as you prefer.
