    Tapioca Flour Puttu

    Tapioca Flour Puttu or Kappa maavu puttu with step by step pictures and a video.

    What is Puttu

    Puttu is a traditional kerala breakfast, It is also had in some parts of Tamil nadu and Kerala. It is actually steamed cakes made mostly with Rice Flour.

    Types of Puttu

    Many Variations have been brought in puttu theses days. Like Stuffed puttu or even fruits are steamed along with the flour, sometimes variations are made in the flour used for the puttu. It can be made using Wheat Flour, Ragi Flour and what not. The variations are numerous. Even millet flour puttu is common these days.

    How to cook puttu

    Puttu is prepared by steam cooking and hence a special vessal called puttu kutti is used.  It has a bottom vessal where we have water and above that is a long cylindrical vessal where we stuff the puttu flour. So while we cook the steam from the bottom vessal cook the flour. The top cylindrical vessal has a mesh like part in the bottom which allows the steam to enter and cook the vessal.

    What if I don’t have puttu kutti

    Absolutely no issues, we can also steam cook in a idli vessal or any other steamer. Just that you cant get the shape but the puttu will be cooked well.

    How to eat puttu

    Puttu is usually had with Banana, Appalam , Steamed Green Moong and sugar or Jaggery.

    Step by Step Method with pictures!!

    1.Start by roasting the tapioca flour , this give a nice flavor . Roast until you get a nice aroma , it may take 10 mins in a low flame.

    2.In a bowl add in Tapioca flour to this add in Salt and country sugar mix well.

    3.Now add Water little by little and then start kneading the flour.

    4. The consistency should be in such a way that if you hold the dough together it should maintain its shape. Next take the puttu vessel and fill the first layer with coconut approximately 1 tbsp and then Tapioca flour approximately 5 tbsp.

    5.Fill with alternate layers of coconut and tapioca flour or as desired.

    6.Once it is filled. Add Water to the base of the puttu vessel and allow it to boil. Then add in the top part of the puttu vessel, close the lid and cook for 8-10 mins.

    7.When the stream starts coming through the lid simmer it for 2 mins and the switch off the flame. After 5 mins remove the top part and invert it, push through the back side of the lid such that the cooked Puttu comes out. Serve hot with banana and Sugar.

    Delicious Kappa Puttu is ready to be served. Serve hot with Banana , Jaggery flour and appalam.

    Standard 1 cup measures 240 ml

    Equipment

    • Puttu Kutti

    Ingredients

    • 2 cup Tapioca Flour
    • Water as needed
    • Salt a pinch
    • ¼ cup Grated coconut
    • ¼ cup Country Sugar or Palm Jaggery

    Instructions

    Notes

    •  If you don’t have a puttu maker, you can also use the crumbled flour directly and steam cook in an idli cooker. Otherwise try getting a Chiratta Puttu Maker, It is easily available online.
    •   Puttu can be served with Coconut, Banana and Sugar .In Kerala It is usually served with Kadala Curry.
    •    Perfect for a filling breakfast.
    •    You can also make kolukattai (Dumplings) out of the puttu flour and steam cook. My mom usually does this way as it will be really easy if we are running out of time.
